Thanks for your insights, Chris. I believe the key is not as much economics as it is education. Have you seen what we’re feeding kids in school? Speaking of economics, we influence change by where we spend our dollars. The more we invest in cleaner food, the more available and lower priced it will become. Personally, I belong to a CSA and support a local bio-dynamic farmer. I believe so wholeheartedly in this approach to “healthy” choices that I’m working on a book with him about his growing experiences with Florida produce and delicious recipes. Hopefully it will spread the message about farming — and enjoying — good foods and inspire others to explore more nutritious options.
